Loin of Lamb with Coriander
Serves 2 to 4 Persons
Ingredients
2 x 6 in Loins, skinned and sinews removed
Marinade
6 fl oz Olive Oil
Juice of two Lemons
Salt & Pepper
4 Cloves Garlic, crushed
1/4 teaspoon Paprika
2 teaspoons Sesame Seeds
Sauce
1 lb Baby Spinach Leaves
1 oz Pine Kernels
1 oz Butter until pink.
Method
- Marinade Mix together ingredients to make marinade, add lamb and stand for between 30 minutes to 4 hours.
- Preheat a griddle pan. At the same time in a second pan sweat off baby spinach leaves and add pine kernels.
- Place loins of lamb in griddle pan and cook each side for 11/2 minutes.
- Arrange spinach on plate, carve lamb
